He answers that on the Kickstarter page, but moreso towards the bottom in the FAQ:
Consider the budget of the a game like GTA5 ($265 million USD)- we're asking for less than %1 of that and we're thinking similar in the short-term and bigger in the long run. We are gamers, we are the ones who also get game 7 of the same series re-released with a new name every year. We are the same people who are sick of boring, open-world, hack-and-slash gameplay in MMOs. We've mentioned time and time again, we will NOT release garbage to you. We would not ask for anything less than what is absolutely necessary to bring what we promise. It may be a large contrast to other projects, but asking for a quarter of what is needed to make a project JUST for the sake of getting money is almost a guaranteed way to permanently end up in the "early access nightmare" or, worse yet, never getting access to anything. We know what it takes to make a game like this and we aren't cutting corners. We will do this correctly, for you and for us, right from the start, no ifs, ands, or buts. We're also going to continuously expand the world and add new content at no extra cost to you. We're sick of those pay-to-win and pay-for-more standard-content games as well.

Continued:
If you want to take even more of a deeper look, check out some of the recently funded games on Kickstarter. Some are smaller scale and asking for much more and have exceeded even the asking goal. Albeit there are some well-known names there from 10-20 years ago tied to some of these projects and that's a good sign. People who know what it takes to make a game are the people who know what to ask for to make their games. If someone is offering to sell you a Porsche 911 Turbo for $30k cash, would you buy it just like that because it's a great deal? Or would you stop and think, "Hmm... how could they possibly sell me that car for $30k?"
If just 20k people threw in $80 each, we'd be there just like that, and you'd all get a copy of the game and a bunch of cool things included with it. Still cheaper than a standard retail game, and you actually have a say in how this one is made.

For the amount of promises you guys made for features I was surprised Peter Molyneux wasn't listed as a developer.

good guys
If you want my honest opinion the game doesn't really look that great. The current gaming market is flooded with zombie survival games at the moment. It's going to be hard to get backers when a lot of people are already burned out on the genre with games like DayZ, H1Z1, Infestation etc, which already have established player bases.
"Will release as a full game and not "early access""
This is going to come back and bite the devs on the ass, they have promised a lot of stuff and if they don't deliver the game is going to get blasted so hard it will never recover. I think EA is the way to go with these type of games, it lets players get in early while providing feedback which can be used to improve the game AS its being developed. Personally if I bought a game and it didn't deliver on most of the stuff that was promised I would immediately refund it, at least with EA I might just put it off for a bit and follow the development.
Anyway, good luck to you and your friends.

The business side is covered, though not entirely within the "gaming industry" side of business.
@Ernie: If you read the whole kickstarter, it mentions a closed beta access for backers. Backers will get access to beta releases throughout the next year and a half leading to the full game which is estimated release of 2017. It doesn't cost extra for backers and this way they get people involved as soon as possible with the process as well as help test for bugs and anomalies
- in this sense, while backers are playing the team is developing and receiving help, input, and feedback from the people with closed beta access.
